Malted rice is made in Ishikawa called "Gohyaku Mangoku" and its polishing ratio is 50%. Kake rice is also Gohyaku Mangoku and its polishing ratio is 58%.
It is characterized by a gentle scent with a smooth, deep, and dry taste.
It is a typical pure rice Ginjo sake made in Kaga, Ishikawa.
*"Kake rice" means rice which gets cool and put directly into Moromi, fermented beans, after steaming.
It melts by the power of koji(malt) and changes into sake. It was selected as the beverage for Novel Night Cap, after party of Nobel Prize Official Banquet and novel prize winners and its related people tried this sake at that time.
